Teriyaki Pulled Pork Lettuce Wraps with Quinoa

Are you tired of the same old crockpot meals week after week? So are we! So we decided to switch things up a bit and try something new. And voila! We have Teriyaki pulled pork lettuce wraps mixed with quinoa. This meal is healthy, low carb, and easy to prepare. See below for recipe and ingredients:

Ingredients:

• 1-2 lbs Pork Loin

• 1 bottle of Mrs. Dash No-Salt Teriyaki Marinade

• 2 cups Chicken Broth

• Garlic

•Onion

• All-purpose meat seasoning (optional for extra flavor)

• 1 cup Quinoa

• Romaine Lettuce

Directions:

1. In the morning, add pork loin and teriyaki marinade to CrockPot.

2. Pour 1 cup chicken broth into empty marinade container > close lid > shake > empty contents to CrockPot

3. Add garlic, onion, additional seasoning if desired > close lid

4. Cook on low for at least 9 hours or high for at least 5 hours. Be sure to stir occasionally.

5. When it’s almost time to eat, cook quinoa accordingly. Use 1 cup chicken broth for 1 cup of quinoa instead of water

6. Cut off the stalk of the lettuce and wash lettuce thoroughly

7. Drain pork loin using a strainer > put pork in a bowl

8. Add cooked quinoa to bowl with pork and mix together

9. Serve on top of lettuce
